Italian dinner for 2 in 10 minutes......

Yes, I cheated just a bit. I made a "non-fried" eggplant parmasan last weekend which we've been having a bit at a time. I threw some fresh broccoli in the microwave to steam, and set to work on a chicken Parmasan.
Pounded 2 chicken breasts to an Inch thick, seasoned with fresh ground pepper & a touch of salt, then onto the griddle under bacon presses. 3 minutes on the first side, 2 on the next, then into an au gratin dish in a spicy tomato sauce, topped with a couple of slices of provolone, more sauce, grated parmasan, then under the broiler. While it was finishing under the heat, the eggplant went into the microwave, and all was ready for plating in 10 minutes.
My husband finished everything on his plate, so I think he found it palatable.
Either that, or he was really hungry.
