For the love of mangoes....
Sep. 23rd, 2008 12:14 pmThere are few fruits I love more than the mango (bite your tongues, my husband does not count)!
When they're in season, breakfast is often a mango cubed with either nonfat cottage cheese or plain nonfat yogurt. Nancy's is a wonderful brand out of Oregon, available at the local Safeway even comes organic.
I just wasn't hungry this morning, so didn't have anything to eat before leaving for work. About half an hour ago, I decided it was time for lunch. I've had three small mangoes sitting in the refrigerator for at least the last three weeks. Amen, they've been kept chilled, so they were nice and ripe, deliciously edible and not rotted. I also have a quart of Nancy's in the back of the top shelf of the refrigerator, tucked behind a jar of zacusca.
At the moment, I'm in post prandial bliss. Unfortunately I'm due at the hospital to see mother and son from yesterday afternoon.
