They call them ice box cookies. You make the dough and then chill it for a few hours to firm it up, before slicing and baking them.

These have been sitting in my fridge for at least 3 months, perhaps longer.

I found a recipe for Guatamalan Spice Icebox Cookies which appealed to my love affair with chilies. This recipe uses Cayenne for the hint of heat, while Ibarra drinking chocolate, grated up, is the seasoned chocolate base which has essences of cinnamon, almond and canela.

Well, there's now more room in the fridge & the cookie jar is full.
