Transcription has been mailed off and I have managed to ensure that I have cross coverage once I leave tomorrow evening for my continuing Ed course, until I'll arrive home sometime on Thursday night (hosannah on high, amen, amen!) From a work perspective, my day is done.

I was debating what to bring home for dinner, and I will admit as hackneyed as it is, the idea of corned beef and cabbage did cross my mind. True to form, my husband wants pizza.

The concept a corned beef and cabbage pizza is too frightening to contemplate! At the very thought of it, I think I may be ill. I think we'll stick to the feta, onions, artichoke hearts and mushrooms that were prone to get. (faith & begorra)

Now, all I have to do when I get home is pack clothes for a couple of days, remember to take my CPAP and my knitting when I walk out the door tomorrow morning(no, I cannot face two days worth of lectures empty-handed no matter how interesting they are), not to mention the pillow I forgot to take this past weekend for my meeting down in Palo Alto. I paid for that little error with a poor night sleep, and a neckache when I finally did pry myself out of bed Saturday morning.

'Ya know, I just had a realization, that in a number of ways really pleases me. I'm looking forward to seeing my friends down in the city (as I'll be crashing with them tomorrow night and Wednesday), and knowing Jay, I can probably expect a really good backrub tomorrow night. Despite all that, I really don't like the idea that I won't be sleeping with my husband for the next two nights. In the greater scheme of things, that's a really good thing.

Here's an idea. It would be an unleavened crust, but might work. Make the crust out of colcannon (mashed potatoes, cabbage and butter), then top with corned beef. Not sure what kind of sauce, if any, you'd use, though.

I'm thinking then perhaps a thinned down stone ground deli mustard with some garlic to it.
