Cooking up a storm.....
Jun. 19th, 2008 02:07 amI'm hosting a weekend retreat/committee meeting here at our home starting Friday afternoon. I have to be part of the committee meeting, so I cannot spend much time cooking while people are here. It has to be done in advance.
So I hit the kitchen tonight after getting home from work.
Avgolemono is made (6 quarts of it), and is now cooling in the fridge. A gallon of homemade mango ice cream has been frozen and churned (lactose free!!) (no added sugar!!), two pans of Oaxacan brownies are cooling on the stove, and the filling for 2 pans of spanikopita has been prepared. All I will have to do with that is assemble filo and filling Friday morning. The chilis for the chili rellenos have been flame roasted, seeded and peeled, and tomorrow morning will get stuffed, egg battered, fried & drained.
The peaches are almost ripe and should be ready for the strudel come Friday morning. The Spanish Rice will need to get done tomorrow, as well as the tomatillo sauce for the rellenos and of course, the beans. Hmmmm, black, pinto, or anasazi? I was going to do a meatless chili, but Jan offered to do a veggie lasagna and a salad, so other than laying in some drinks, I think the meal situation should be under control.
